Cornish Hens with Cranberry Thyme Sauce

 I have recently been very inspired by my Bon Appetit Magazines. The November issue, in particular, has had some amazing dishes, and I am actually making the cover recipe for Christmas!

Then, when I am hungry, I refer back to the magazine and I have a bunch of options to chose from!  I decided to make this dish because I love cornish game hens! 

 

A cornish game hen is an immature chicken that has been bred to be small enough for a single serving, and only produce white meat.

Balsamic Chicken with Thyme Cous Cous

I am always looking for a tried and true chicken recipe. I guess I just don’t really like chicken, unless it is on the bone. However, this recipe is a great weeknight meal that is simple to make yet elegant in flavor.  The only thing is, do NOT overcook the chicken. It gets dry! I sauteed some zucchini with this meal, but feel free to add anything green like spinach, green beans, or a salad.

Tomato Basil Soup with Parmigiano Crisps

This morning when we woke up, it was raining like crazy.  So, Erik suggested soup for dinner. He loves all soup, but he really likes tomato basil (yes, you are remembering correctly, he hates tomatoes). This recipe just fell upon me, and it is a winner! Roasting the tomatoes is a must.
