Zucchini Chocolate Chip Cookies

Like I have mentioned before, I have been snuggling up at night with Barbara Kingsolver’s “Animal, Vegetable, Miracle”.  I think I enjoy it mostly because I feel like Barbara Kingsolver and my mother are one in the same. I feel like it is my mother actually writing the book! And surprisingly, Camille her daughter loves to cook just as much as I do, and writes most of the recipes in the book.

I grew up with the life that Camille and Lily (Barbara’s daughters) are accustomed to (minus raising chickens). My mom had a huge garden filled with vegetables, fruits, and herbs. She would can tomatoes, peaches, and green beans in the summer, and freeze pesto and blueberries for us in the winter. 

 

I guess I had no idea how spoiled I was. Most children, unless they are living on a farm, do not have that kind of life growing up in a suburb in Virginia. But, because Virginia has so much land, we had about an acre sized lot just filled with potential for growing. 

 

This recipe uses ingredients you don’t usually see in cookies: honey, whole wheat flour, and zucchini. I am not quite sure I am 100% sold on the honey taste. I might experiment with organic can sugar next time! 

 

 

Prep time: 10 minutes

Cook time: 10-15 minutes

Makes about 3 dozen

1 egg

1/2 c. unsalted butter, softened

1/2 c. brown sugar, lightly packed

1/3 c. honey

1 tbsp. vanilla extract

1 c. white flour

1 c. whole wheat flour

1/2 tsp. baking soda

1/4 tsp. salt

1/4 tsp. cinnamon

1/4 tsp. nutmeg 

1 c. zucchini, finely grated

12 oz. bag of chocolate chips, I use Ghiardelli 

 

Preheat oven to 350. In a large mixing bowl, beat egg lightly. Combine sugar, brown sugar, honey, and vanilla extract. Beat to combine. 

 

In a separate bowl combine 2 flours, soda, salt, cinnamon, and nutmeg. Slowly blend into liquid mixture making sure not to over beat. 

 

With a wooden spoon stir in zucchini and chocolate chips. 

 

Drop by spoonfuls onto a greased baking sheet, and flatten with the back of your spoon. Cook for 10-15 minutes until done to your liking.
