Christmas Wreath Cookies

I make these “cookies” as gifts to my lovely coworkers every year for our Christmas Eve performance of the Nutcracker.christmas_wreath_cookies

 

They sound and look weird, but people love them! I actually was first introduce to these by my Grandma Pat. She would make these cookies (and others) at her house in Rochester, NY every time we went there for Christmas.  Thanks for starting one of my traditions Grandma!

 

Prep time: 5 minutes

Cook time: 10 minutes

Makes 15 cookies

 

1/2 c. salted butter

4 c. mini marshmallows

1 tsp. green food coloring

1 tsp. vanilla

4 c. cornflake cereal

Cinnamon red hot candies, for garnish

 

Melt butter in a large sauce pan over low heat. Stir in marshmallows, and cook, stirring, until melted. Remove from heat and add in food coloring, vanilla, and cornflakes. 

 

Quickly, with wet hands, drop heaping spoonfuls onto waxed paper. (You can form a wreath shape- I make balls). When your hands get sticky, just run them under water again.  Immediately decorate with the red hots. Allow wreaths to cool to room temperature before removing from the waxed paper.

    Thanks for the recipe and the memories. My third-grade teacher, Mrs. Carlson, taught us how to make these. She would butter our fingers so the cornflakes wouldn’t stick to our hands. It’s one of my fondest memories from grade school (in the 60’s). Nice idea to give them to co-workers!

    These are my all time favorite cookie… the last few bunches i made came out real hard so i wanted to see what i was doing wrong. maybe adding the vanilla and food coloring last after it has been removed from the heat will do the trick.. i’m hoping. Either way, i still LOVE them!
