Thank you for bearing with me these past couple of weeks. I have finally got my new blog up and running and I thought I would start my first post with the best way to start any “new” day. OATMEAL. I told you I would be on an oatmeal kick!

Don’t make fun of me, but I am a bit on a health kick. I think it is after I read this book about being vegan. Not that I could EVER be vegan, or vegetarian for that matter, but it is still interesting to read what is influencing other people’s decisions about their food. But, what it did do was open up my eyes to new ingredients like agave nectar, soy dairy-products, unbleached flour (which I was doing anyway) and coconut oil. So bare with me until I get this out of my system. I am sure you will be hearing more and more about these ingredients.
Also, we have started back to work on a really fun show. We are starting our Broadway “rep” where there are many fishnets, high heels, low cut dresses, short skirts and SINGING! Yes. I have to sing in the next rep. Everyone is Seattle should buy a ticket just so they can hear the ballet dancers try to sing.
Well..if not that, at least make my oatmeal…..
Serves 2
Prep time:1 minute
Cook time: 15 minutes
1 c. vanilla soy milk
1 c. water
Pinch of Kosher salt
1 c. organice whole rolled oats
1/4 c. canned pumpkin
1 tsp. pumpkin pie spice
2 tbsp. agave nectar
1/3 c. dried cranberries
Bring soy milk, water, and pinch of salt to a boil. Add the rolled oats and reduce heat, stirring occasionally for 10-15 minutes (depending on how you like your oatmeal). Add in the canned pumpkin, pumpkin pie spice, agave syrup, and cranberries, stir until combined. Cover and remove from heat and let stand for a few minutes. Adjust seasonings (like more soy milk or pumpkin pie spice) and drizzle a little more agave syrup on top. Serve warm!

You *say* you could never be vegetarian now, but once we get our hooks into you :)!! Just kidding. But the oatmeal does sound yum.

You might get your hooks into me. I am definitely giving up pork for a while. I read some things last week, and I just can’t seem to stomach it. Have you always been vegetarian? Why did you decide to go vegetarian and not vegan?

Hilarious about the singing… I might just try to show up for that.
And… super proud of you trying all those alternative ingredients. I may enlist your help in making homemade formula for Ezra to try. I’m totally fed up with all the CORN SYRUP! in every non-dairy formula, including every organic/all natural brand I can find. I need to borrow some of that coconut oil…

Tell me when and where and I will help you with the formula! It’s probably like making a smoothie, right? Coconut oil is expensive, but it will last a LONG time. A little goes a long way. I imagine I will have this jar for months.

Kari,
I could never be a vegetarian, though I wonder why I am not, I love animals more than people! and the health benefits outweigh the negatives (what negatives?…..a JUICY STEAK!).
I had 2 tequilas last night, does that count for the agave juice?

Ha! Tequilla and Agave might have some of the same healthy benefits. Google it and let me know:)

Ooh, I like the new layout! I used to hate oatmeal, but then I made it with little bits of dates and raisins and walnuts, and I was in love. I also love cream of wheat, it’s what my mom used to make for me when I was little instead of oatmeal.
You asked if it was hard slicing the tart - the pate sablee does get a little crumbly, but it’s not too bad. I have a tart pan with a removable bottom, so I just lifted the tart out onto a plate and it was fine. It’s possible to stabilize the mascarpone/whipped cream with gelatin (like a bavarian), but I really didn’t want to do that since I like my food to be just a little messy. It seemed more summery that way.

I LOVE cream of wheat. My mom also used to make that for me when I was little instead of oatmeal. I need to figure out how to make an organic version of cream of wheat……hmmm.

You haven’t been eating healthy?
February 24, 2009 at 12:25 pm
yay for dairy free cooking! this looks amazing, can’t wait to try it.
February 24, 2009 at 10:48 pm
Are you dairy free? Have you read Skinny B!itch or the Maker’s Diet?
February 26, 2009 at 12:24 am
I haven’t! I’m allergic to the protein in dairy, so avoid it as much as I can…but I need more good recipes. I’ll check out those books too

That is right. I remember this now:)

i just made this and it was delicious!! just how i’d want every bowl of oatmeal to taste. I made it with skim milk and honey for lack of the original ingredients. Delicious and healthy!
